Tuna pasta salad

This delicious tuna pasta salad uses ingredients like extra virgin olive oil, plenty of herbs, and lots of veggies to provide you with plenty of mood-boosting nutrients. Did we mention it’s super quick to throw together too?

1 cup cooked wholemeal pasta

1 cup chopped spinach

1 tin tuna in springwater

1 tbsp chopped parsley, finely chopped

¼ cup tomatoes, chopped

¼ cup cucumber, chopped

1 tbsp red onion, chopped

¼ cup capsicum, chopped

 

Lemon vinaigrette:

1/2 tbsp Lemon juice

1 tsp Dijon mustard

½ tsp Black pepper

1 tbsp Extra virgin olive oil

1/2 tbsp Italian herbs

 

Instructions:

  1. Cook the pasta according to package instructions. Once ready, rinse under cold water, drain, and set aside.
  2. In a small bowl, combine the vinaigrette ingredients together.
  3. In a large bowl, combine the pasta, spinach, tuna, parsley, tomatoes, cucumber, red onion, and capsicum and combine. Store in the fridge, covered, for at least an hour before enjoying.
