Red Lentil Dahl Recipe

If you're interested in starting to bulk cook as a form of meal prep, this recipe makes a great option! It's ready in under an hour, uses only a few ingredients, and is also budget-friendly.
Ingredients:
- 1 large onion
- 4 cloves garlic
- 1 carrot
- 1 bell pepper
- 1 Tbsp ginger, peeled
- 1 Tbsp extra virgin olive oil
- 1.5 cup dried red lentils
- 1 can diced tomatoes
- 1 can light coconut milk
- 2 cups vegetable broth
- 1 Tbsp Garam masala
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp paprika
- 2 cups spinach
- Wholemeal naan or brown rice for serving
- Optional: Coriander /Cilantro for serving
Instructions:
- Chop the onion, garlic, carrot, bell pepper and ginger.
- Add the oil to a pot over medium heat and add the onion, ginger and garlic. Saute for about 3 minutes.
- Add the carrot and bell pepper to the pot and saute for another 5 minutes or until softened.
- Add the lentils, tomatoes, coconut milk and vegetable broth and let simmer for 20 minutes with the lid on.
- Before removing from heat, stir in the spinach. Serve with wholemeal naan bread or brown rice and top with coriander / cilantro.
