Red Lentil Dahl Recipe

This delicious red lentil dahl is a new favourite for us here at The Good Nutrition Co., and we are certain you will love it too! 

If you're interested in starting to bulk cook as a form of meal prep, this recipe makes a great option! It's ready in under an hour, uses only a few ingredients, and is also budget-friendly.

Ingredients:

  • 1 large onion
  • 4 cloves garlic
  • 1 carrot
  • 1 bell pepper
  • 1 Tbsp ginger, peeled
  • 1 Tbsp extra virgin olive oil
  • 1.5 cup dried red lentils
  • 1 can diced tomatoes
  • 1 can light coconut milk
  • 2 cups vegetable broth
  • 1 Tbsp Garam masala
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp paprika
  • 2 cups spinach
  • Wholemeal naan or brown rice for serving
  • Optional: Coriander /Cilantro for serving

 Instructions:

  1. Chop the onion, garlic, carrot, bell pepper and ginger.
  2. Add the oil to a pot over medium heat and add the onion, ginger and garlic. Saute for about 3 minutes.
  3. Add the carrot and bell pepper to the pot and saute for another 5 minutes or until softened.
  4. Add the lentils, tomatoes, coconut milk and vegetable broth and let simmer for 20 minutes with the lid on.
  5. Before removing from heat, stir in the spinach. Serve with wholemeal naan bread or brown rice and top with coriander / cilantro.
