Moroccan-Spiced Vegetable Tagine

Ingredients:
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon cinnamon
- 1/2 teaspoon cayenne pepper (adjust to taste)
- 2 cups mixed vegetables (carrots, zucchini, eggplant)
- 1 can chickpeas, rinsed and drained
- 1 can diced tomatoes
- 1 cup vegetable broth
- 1/2 cup dried apricots, chopped
- Salt and pepper to taste
- Fresh parsley for garnish
- 1/2 cup cooked couscous or quinoa for serving
Instructions:
- In a large pot, heat olive oil over medium heat. Add the onion, garlic, and ginger, sautéing until softened.
- Stir in cumin, coriander, cinnamon, and cayenne, cooking for 1-2 minutes until fragrant.
- Add mixed vegetables, chickpeas, diced tomatoes, vegetable broth, and dried apricots. Bring to a boil.
- Reduce heat, cover, and let simmer for ~40 minutes until vegetables are tender and flavours meld. Season with salt and pepper.
- Serve the tagine over cooked couscous or quinoa, garnished with fresh herbs.
