Mixed Berry Beauties

These mixed berry beauties make the perfect indulgent but healthy self-care sweet. Rich in gut-loving fibre, heathy fats, and polyphenols, you can leave the guilt behind!

Ingredients:

1 cup mixed berries, mashed with a fork (we used frozen berries that were defrosted and cheated with a couple of blitzes with a stick blender!)

2 TBSPN chia seeds
1 TBSPN maple syrup
100g dark chocolate (70%+) melted

Method:

1. Defrost and mash or blitz your berries (we limited the blackberries to 3-4 for the entire mix, as they contain more FODMAP sorbitol than the other berries)
2. Add chia seeds and maple syrup and refrigerate for 20-mins or until they form a gel.
3. Dollop onto a freezer tray (we used a teaspoon size) and freeze for an hour.
4. Dip into melted dark choc and refreeze or refrigerate. Enjoy!
