Healthy Apple Strudel

There is such as thing as a ‘healthy dessert’ and we have found it! Try this delicious take on a family favourite without the excessive calories. Mix up the spices to suit your taste buds or the fruit to add more variety to your day. It is scrumptious made with peaches too!

Serves 2

Ingredients

2 Peeled and chopped apples

¼ cup raisins

¼ cup flaked almonds

¼ teaspoon cinnamon

2 pieces of mountain bread

Spray oil

Icing sugar

Reduced fat Greek yogurt for serving

Method

  1. Put peeled and chopped apples in a microwavable container on high for two minutes

  2. Mix in raisins, flaked almonds and cinnamon

  3. Line a baking tray with baking paper and top with 2 pieces of mountain bread, spraying each piece individually with the spray oil

  4. Spoon apple mixture into the centre

  5. Fold over the edges and flip to secure and spray again

  6. Bake at 180 degrees for 15 mins or until golden brown

  7. Dust with icing sugar

  8. Cut in half and serve with reduced fat Greek yoghurt
