Falafel, Salad & Hummus Wrap

Who ever said that plant-based eating was boring? Not with this delicious recipe! Packed with flavours and fibre, this GNC lunch staple will keep you satisfied through to dinner.

Serves 2

Prep time: 10 minutes. Cook time: 15 minutes.  

Ingredients

6 falafel (~150g), cooked and halved

2 wholemeal Lebanese bread or whole grain wraps

2 Tablespoons hummus

¼ cup fine bulgur wheat

½ red onion, finely chopped

1 garlic clove, crushed

1 lemon juiced + zest

½ cup flat-leaf parsley, chopped

½ cup mint, chopped

½ avocado

Green leaves

Method

  1. Place fine bulgur wheat in a bowl with the water and let soak for 15 minutes, then drain excess moisture (Note: fine bulgur wheat is similar to cous cous in that soaking is all that it needs. If you have coarse bulgur wheat, you may need to cook it according to packet instructions).
  2. Add onion, tomato, garlic, lemon zest and juice, parsley and mint to the bulgur and mix well to form the tabouli.
  3. Spread hummus down the middle of the Lebanese breads or wraps, followed by the tabouli, avocado, green leaves, and cooked falafels. Then roll it up and serve fresh or toasted.
