A Mediterranean Lunch Box

So super-simple and delicious, this Mediterranean Lunch Box is certain to become a weekday staple!

Serves: 2

  • 1 cup cooked quinoa or grain of your choosing
  • 1 medium cucumber - roughly chopped
  • 1 yellow capsicum, chopped
  • 1 cup baby spinach
  • 1/2 onion, diced
  • 1/2 cup cherry tomatoes
  • 1/2 cup fresh parsley, chopped
  • 1 can chickpeas 
  • ¼ cup hummus
  • 1 tsp paprika

Dressing

  • 2 tablespoons olive oil
  • 1 lemon - juiced
  • 2 tablespoons white wine vinegar
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper

Method

  1. Arrange all ingredients into 2 lunchboxes and dollop the hummus on top. Sprinkle with paprika.
  2. Mix the dressing ingredients in a small bowl then transfer to a small container and pack with the salad.
