A Mediterranean Lunch Box
Jun 28, 2024So super-simple and delicious, this Mediterranean Lunch Box is certain to become a weekday staple!
Serves: 2
- 1 cup cooked quinoa or grain of your choosing
- 1 medium cucumber - roughly chopped
- 1 yellow capsicum, chopped
- 1 cup baby spinach
- 1/2 onion, diced
- 1/2 cup cherry tomatoes
- 1/2 cup fresh parsley, chopped
- 1 can chickpeas
- ¼ cup hummus
- 1 tsp paprika
Dressing
- 2 tablespoons olive oil
- 1 lemon - juiced
- 2 tablespoons white wine vinegar
- 1 teaspoon dried oregano
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
Method
- Arrange all ingredients into 2 lunchboxes and dollop the hummus on top. Sprinkle with paprika.
- Mix the dressing ingredients in a small bowl then transfer to a small container and pack with the salad.
